If you’ve ever picked up a 2 lb bag of our French Roast and noticed it feels a bit bulkier than your usual medium roast, you aren't imagining things. Darker roast coffees love to stretch out.

Here is what is actually happening behind the scenes at the roaster:

- The Roasting Heat: When green coffee beans go into the roaster, they are dense, heavy, and full of moisture. As the temperature climbs, that internal moisture turns to steam.

- The Expansion: Under high heat, the physical structure of the bean expands and puffs out. Because dark roasts spend longer in the roaster and undergo more intensive heat treatment, they lose more density and puff up to a significantly greater physical volume than light or medium roasts.

- The Sizing Fix: Because these beans take up more physical space per ounce, a standard bag just won’t cut it. That is why our French Roast gets packed into a roomier bag—guaranteeing that you always receive a full, honest 2 lbs of freshly roasted coffee from our roaster to your cup.
